JARDINERO

1.5 oz. Piscologia Pisco
1 oz. Celery Juice
.75 Meyer Lemon Juice
.5 Simple Syrup
Cumin
Celery Green
.25 oz. Cynar

 

Add all liquids except Cynar to a mixing glass. Shake with ice to chill and strain into a chilled cocktail glass rinsed with Cynar. Add a pinch of cumin on top and a celery green for garnish.

MÁQUINA VERDE

1.5 oz. Piscología Pisco
.75 oz. Green Chartreuse
.25 oz. Lime Juice
.25 oz. Simple Syrup
4 Basil Leaves

 

Muddle basil in a mixing glass.  Add liquids and shake with ice to mix.  Pour into a bucket and top with soda.  Garnish with a lime wheel.

ANDES SOUR

1.5 oz. Piscología Pisco
.5 oz. Dimmi
.25 oz. Campari
.5 oz. Lemon Juice
.25 oz. Simple Syrup
3 Dashes Peychaud’s Bitters
1 Egg White

 

Add everything but bitters to a mixing tin.  Shake vigorously with ice to emulsify egg.  Strain into a chilled cocktail glass.  Add 3 drops of bitters and swirl with a pick.  Sprinkle safflower petals on top.

PISCONI

1 oz. Piscología Pisco
1 oz. Campari
1 oz. Carpano Antica Vermouth
.5 oz. Blood Orange

 

Add all ingredients to a mixing glass.  Shake with ice and strain into a chilled martini glass.  Garnish with a blood orange wheel.

HUMMING HERDER

1.5 oz. Piscología Pisco
.5 oz. Sonoma Syrups Lavender Syrup
.5 oz. Fresh Lemon Juice
6 Drops Bitter End Moroccan Bitters
2 oz. Club Soda
Grated Nutmeg

 

Add all liquids to a rocks glass with ice and stir well.  Garnish with freshly grated nutmeg.

SOUR PUSS

2 oz. Piscología Pisco
.5 oz. Lemon Juice
.5 oz. Lime Juice
1 oz. House Grenadine
2 Dashes Angostura Bitters
1 Egg White
Cinnamon

 

Add all ingredients to a mixing glass, save cinnamon.  Shake with vigor to chill and emulsify the egg white.  Strain into a chilled rocks glass.  Sprinkle with cinnamon.

VERANDAH

2 oz. Piscología Pisco
.5 oz. Black Pepper Simple Syrup
.25 oz. Lemon Juice
3 Basil Leaves
1/2 Kiwi

 

Muddle kiwi and basil in a mixing glass. Add all ingredients and shake with ice. Strain into a chilled cocktail glass.  Float a basil leaf for garnish.

NASTY BETTY

1.5 oz Piscologia infused with pineapple  (recipe below)
.75 oz chartreuse amarillo
.75 fresh lime juice
.25 amaro
Venezuelan chocolate for grating
Salt

 

Infuse Piscologia with pineapple cubes. (Let sit for at least 48 hours.) Muddle macerated pineapple, (about 1 ounce) in mixing glass, add infused pisco, chartreuse, and lime. Shake, double strain over rocks in old fashioned glass. Garnish with pineapple cubes on a pick, grated bitter dark chocolate and a dash of sea salt. Drizzle amaro to sink in glass.

STINGER

1.5 oz Piscologia
.5 oz honey
2 threads of saffron
.75 oz lime juice
75 oz lillet blonde
egg white
orange bitters
sparkling wine

 

Separate egg white into a shaker, add the rest of the ingredients except for the sparkling wine. Shake with ice, double strain into tulip. Top with sparkling wine, then spoon the foam on top of the drink. Garnish with orange peel and thread of saffron.

THE GRAPE ESCAPE

1.5 oz Piscologia
1 oz verjus or other unfermented grape juice
.75 oz lime juice
.5 oz ginger syrup
dash orange flower water
ginger beer

 

Shake all ingredients together except the ginger beer. Double strain into collins glass with ice, top with ginger beer. Garnish with a thinly sliced lime wheel and thinly sliced ginger root.

EL CAPITÁN

2 oz Piscologia
.75 oz Carpano Antica
.25 oz Amaro Nonino
Angostura Bitters – 2 dashes
Lemon twist

 

Add all liquids to a mixing glass with ice and stir with a bar spoon for 30 seconds. Strain into a coupe glass and garnish with a lemon twist.

PISCO SMASH

8 seedless red grapes
1 1/2 ounces Pisco
1/2 ounce simple syrup
2 ounces Riesling
3/4 ounce fresh lemon juice

 

Muddle the grapes until they burst. Add the remaining ingredients and enough ice to fill a rocks glass and shake. Pour into the rocks glass and garnish with a lemon slice.
