IMPROVED CAPITÁN

2 oz Pisco Quebranta 

1 oz Sweet Vermouth 

1 tsp honey simple syrup 

½ tsp Maraschino 

1 dash Absinthe 

2 dash Boker’s bitters 

 

Stir all ingredients with ice until well-chilled and diluted, strain into a pre-chilled glass, and garnish with a lemon peel & two green olives. 

CAPITÁN SOUR

1.5 oz Pisco Quebranta 

1.5 oz Sweet Vermouth 

2 dash Angostura bitters 

.5 oz lemon juice 

.5 oz lime juice 

.5 oz Demerara simple syrup 

1 egg white 

 

Add all ingredients to a shaker and shake dry, shake again with ice, serve into a chilled glass, and garnish with freshly grated nutmeg.

IT’S GIVING RED

1.5 oz Pisco Acholado 

1 oz Sorel Liqueur 

.5 oz cinnamon honey syrup 

.5 oz lime juice 

 

Add all ingredients to a shaker with ice, shake, strain over new ice, top with Fever Tree Pink Grapefruit, and garnish with a grapefruit slice.

NO TEA, NO SHADE

1.5 oz Pisco Acholado 

.75 oz Faccia Bruto Aperativo 

1 oz strong-brewed black tea 

.75 oz lemon juice 

.5 oz lemon oleo saccharum 

 

Add all ingredients to a shaker with ice, shake, strain over new ice, top with IPA, and garnish with a lemon peel.

SLOE CHILCANO FIZZ

1.5 oz Pisco Acholado 

1 oz Ford’s Sloe Gin 

.5 oz lime juice 

1 bar spoon Balsamic vinegar 

 

Add all ingredients to a shaker with ice, shake, strain over new ice, top with gingerale, and garnish with a lime wheel.

MEET ME IN BRIGHTON BEACH

1.5 oz Pisco Italia 

.75 oz Degroff Spirits Amaro 

.5 oz pineapple gomme syrup

1.5 oz pineapple juice 

.5 oz lime juice 

2 dash Angostura bitters

 

Add all ingredients to a shaker with ice, shake, strain over new ice, and garnish with a pineapple slice. 

PISCO CRUSTA

2 oz Pisco Quebranta 

.5 oz Pierre Ferrand Dry Curaçao 

.25 oz Maraschino 

.5 oz lemon juice 

.25 oz grapefruit juice 

2 dash Regans Orange bitters

 

Add all ingredients to a shaker with ice, shake, strain into a chilled glass with a sugar rim, and garnish with a lemon peel. 

I LOVE NY SOUR

2 oz Pisco Acholado 

1 oz White Port 

1 oz strawberry rhubarb syrup 

1 oz lime juice 

2 dash bitters 

2 muddled strawberries

Egg white 

 

In a shaker, gently smash two whole strawberries with a muddler, add all other ingredients, and dry shake. Add ice and shake with vigor again, strain into a chilled glass, and garnish with lime zest.
