OUR PRODUCTS

A coastal spirit and a high-altitude spirit at the same time, Pisco is made from grapes grown below 2,000 meters above sea level (6561 feet). Pisco is largely a cottage industry, which we support by working with small grower-producers to bring their products to market. Look for our core products, our limited batches, and our select bottlings that illustrate the vast diversity in flavor that exists in Pisco from Peru.

Pisco Quebranta

Our most decorated pisco is distilled from Quebranta, a native red grape from Peru known for its elegance and intensity.

Aroma: crisp green apple, candied pecan, green mango

Taste: buttercream, rich minerality, baked apple

Pisco Acholado

A field blend of 95% Quebranta and 5% Italia. Excellent for balanced cocktails.

Aroma: tart green apple, custard, platanitos

Taste: dried mangoes, melon, huacatay

Pisco Torontel

Torontel is a high-ester white grape that distills into elegant and richly fruited single-varietal pisco. Only 440 bottles were made.

Aroma: honeysuckle, tart green apple, muña

Taste: stone fruit, eucalyptus, minerality

Pisco Mollar

Mollar, a rare red grape, distills into full-bodied single-varietal pisco with a rich mouthfeel and a long finish. Only 1066 bottles were made.

Aroma: pink peppercorn, guanabana, graham cracker

Taste: blanched almonds, custard, Anjou pear

Pisco Italia

Italia is a high-ester white grape that distills into an electric stone-fruit forward single-varietal pisco. Only 293 bottles were made. 

Aroma: eucalyptus, plumeria, kiwi

Taste: tart kiwi, peaches and cream, gardenia

Pisco Acholado No. 1

Blend of 70% Italia and 30% Quebranta from the Monte Carmelo bodega in Azpitia, Peru. Distilled by Hugo Chumpitaz from estate-grown grapes.

Aroma: candied lemon, pencil shavings, fresh muscat pulp 

Taste: Sweet cream, green grape, fresh lilac

Pisco Acholado No. 2

Blend of 70% Italia and 30% Mollar from the Monte Carmelo bodega in Azpitia, Peru. Distilled by Hugo Chumpitaz from estate-grown grapes.

Aroma: candied ginger, fresh muscat pulp, lime peel 

Taste: key lime pie, wet stone, jasmine

Italia 2021

A single-varietal Italia pisco, cosecha 2021,  from the Monte Carmelo bodega in Azpitia, Peru. Distilled by Hugo Chumpitaz from estate-grown grapes.

Aroma: honeydew melon, fresh cut grass, fresh muscat pulp 

Taste: floral bomb, elderflower, mango lassi
